It’s a very unspecific guide, but it generally works for the simplest vegetarian curries and daals.

To make curry out of anything, add your ingredients in the following order:

  1. FAT
  2. WHOLE SPICES
  3. ASAFOETIDA (if using)
  4. AROMATICS (brown the onions, add garlic, ginger, curry leaves afterwards)
  5. TOMATOES
  6. GROUND SPICES
  7. VEGETABLES OR LENTILS (plus water, if required)
  8. TIME

After slow or quick cooking, the dish can be garnished with fresh coriander before serving.
